Stone ovens are traditionally fired from below, with the heat being transferred through the stone floor. We use the same principle for our baking stones. A separate heating element heats the compact ceramic stone from below to temperatures of up to 300(degree)C. Your pastries will taste Danish, pizzas Italian and bread like it's from the local baker's.
